Who hasn't heard of Lincolnshire sausages and Lincolnshire potatoes? But there's much more than that to traditional Lincolnshire fare. Lincolnshire is the second largest county in England, and its diversity and ancient rural heritage are reflected in its delicacies, some of are almost completely unknown in other parts of the country!

The beers brewed at the windmill in Wainfleet by George Bateman & Co are world renowned. They feature a bicuity maltiness balanced by bittering hops, a characteristic of Lincolnshire ales. And we're also lucky to have fine artisan micro-breweries around Grantham, in the deep south of the county.

Lincolnshire Stuffed Chine is a delicacy not widely known elsewhere. "Chine" is an old term for the back of an animal, and stuffed chine is made by curing a pork back in brine, slicing pockets into it and stuffing them with a parsley mixture. The meat is then cooked and served cold, thinly sliced, rather like boiled ham. The pork takes on lots of parsley flavour, and the sliced meat looks quite striking: layers of pink pork alternating with layers of deep green parsley. Traditionally it was served at Christenings but you can eat it on any occassion!

Roe's Dairy Farm is one of the last small-scale, family run dairy farms in the county. Their milk is rich and creamy, and its quality reflects the great skill and care taken in its production.
