Lincolnshire Poacher Cheese

Lincolnshire Poacher is the county's most celebrated cheese.

Made by Simon & Tim Jones on their family farm on the edge of Lincolnshire Wolds, Poacher is very much in the style of a traditional West Country Cheddar. It's made from unpasteurised milk from their own cows to the Jones's own secret recipe, which gives it a wonderful fruity and nutty taste. Each cheese is carefully matured for 12-14 months, and is only released from store when it's at the very pinnacle of excellence.

At Village Stores we are proud to carry the original Poacher, but you can ask us to supply their other special cheeses - vintage poacher is mature and full-flavoured, smoked poacher is a delight, Lincolnshire red is like a traditional farmhouse Leicester, and Double Barrel is like an extra mature vintage poacher - very full of flavour!

Dam Buster cheese is another county favourite

Firm and moist, it has a mature white-cheddar style. It is full of flavour and has a wonderfully buttery note, too, which is hard to describe. After being carefully matured, each individual round of cheese is carefully coated in black wax - this prevents further maturation, and helps the cheese to retain the soft, creamy texture everyone loves. A very special cheese

When we first sold Dam Buster, lots of people picked up the black waxed cheeses, thinking they were buying pork pies!

From time to time we also have other Lincolnshire cheeses. Lincoln Imp is a waxed white cheddar flavoured with chilli - quite hot! Lincoln Blue, on the other hand, is a waxed blue cheese that just melts in your mouth!
